Tuna
Salad With Mango Chutney
Makes 4 main servings or 6-8 sandwiches
5 - 6 oz. cans light tuna in water, drained
1/4 cup mayonnaise
1/4 cup Tis Tasty's Mango Chutney
2 tablespoons curry powder
2 tablespoons sliced almonds, plus extra
for garnish, toasted.
Lettuce Leaves and tomato wedges
Shredded Monterey jack cheese, for garnish
Shredded cheddar cheese, for garnish
Place the drained tuna in a strainer and rinse
several times, until the water runs clear. Drain well,
pressing as much water out of tuna as possible.
In medium bowl, combine the tuna, mayonnaise,
chutney, curry powder and toasted almonds.
Stir well.
Line 4 plates with lettuce and divide tuna
salad on plates. Garnish each with tomato wedges,
Monterey and cheddar cheese. Garnish with
toasted almonds.
Note: to toast nuts, spread on baking sheet
and bake at 375 degrees for 5 to 8 minutes.

Crockpot Apple-Glazed Roast Pork
Makes 8 main course servings.
1 - 4 lb. trimmed Loin Pork Roast
Salt to taste
Pepper to taste
6 quartered apples
1 - 6 oz. Tis Tasty's Hot Apple Glaze
Rub roast with salt and pepper. Brown roast under broiler to remove excess
fat. Drain well.
Place quartered apples in bottom of crockpot and place roast on top of apples.
Pour Hot Apple Glaze over roast, cover
and cook on low setting for 10-12 hours
or until done.
Sweet potatoes added on the bottom of the
crockpot with the apples or baked in the
oven by themselves are also a nice
compliment with the pork roast. |
